TORTA (POTATO KNISH)

4 lb. potatoes, boiled and mashed with 1/2 stick margarine
2 large bunches scallions, chopped
1 large onion, chopped
salt and pepper
1 egg, beaten
6 to 7 thin slices margarine
1 stick butter or margarine
1 box phyllo pastry

Saute scallions, butter (1 stick) and onion. Mix in
potatoes. Add salt and pepper to taste.
Line 13 x 9 x 2-inch pan with 4 to 5 sheets pastry.
Spread mixture on top of sheets. Top this with another 4 to 5
phyllo pastry. Spread egg on top of pastry. Put 6 to 7 slices
margarine on top. Bake at 375 degrees for 30 to 45 minutes, until
golden. Let stand 20 to 30 minutes. Cut into 3 inch squares.
Super easy and super delicious!
